Turn an idea into a bounded pilot
Build on the foundations in part one. Write down the decision, baseline, data sources, responsible manager, intervention, and success measure before choosing a model or integration.
A possible workflow for perishables
- Use receipts and stock records with sales history.
- Record waste and substitutions consistently.
- Compare a suggested order with a simple historical baseline.
- Let a manager approve changes and record the reason.
- Compare actual results across equivalent periods, net of costs.

Video as a possible review aid
Video management, heatmaps, plate recognition, and automated cleanliness or uniform audits are distinct capabilities with different requirements. This article does not establish a current UniSight VMS integration. Any proposed system needs an appropriate purpose, permissions, retention rules, access controls, and review of applicable requirements.
Use a video or transaction flag as a prompt for human review. Validate false positives and missed events in representative conditions. A camera does not prove intent or guarantee prevention of theft or operational mistakes.
Keep people accountable for decisions
Use time and scheduling records for review without assuming automated staffing predictions. Define who can override a recommendation and what happens if data is late or the tool is unavailable.
Calculate ROI without overlap

Do not count the same damaged item as a receiving, shrink, and waste benefit. A model's accuracy improvement is not itself a dollar saving.
Ask for a demonstration of the actual scope
Bring representative exceptions to a platform discussion. Confirm the specific product, available integration, review responsibility, and operating costs. Expansion should follow measured pilot results, not a claimed guarantee of parity with larger chains.
